Head Chef: Mr Lee Thomas

Lee's depth of experience includes working at AA Rosette cuisine level at the Miskin Manor, where he was Assistant Executive Chef, prior to joining the Cardiff & County Club in April 2013. He has an extensive repertoire of culinary skills and is equally proficient with Pastry, as he is with the Sauce and Larder sections of the kitchen.

He particularly enjoys the challenge of creating Daily Menus using a wide range of fresh and seasonal ingredients, while mixing the highly popular traditional dishes that the Club members so enjoy coupled with new innovative dishes that are also receiving wide acclaim.

Since joining the Club, Lee has also greatly enjoyed the valuable experience of working with chefs such as James Sommerin, Stephen Terry, Shaun Hill, Will Holland, Anand George and Bryan Webb on the hugely popular Guest Chef Evenings and naturally is looking forward to future events with other leading chefs from around the UK.

With his kitchen brigade he is aiming to elevate the cuisine so that it can compete with any of the best restarants in the region and be a major asset in attracting new memership for the Club.

The Cub has enjoyed great success with inviting multi-award winning Chefs to provide Gourmet Evenings, which have always sold out within days of announcement.
